How to make beet brownies using oatmeal.

  • For eggless brownies we need:
  • 100 grams of dark chocolate;
  • 1 cup beet puree (easily made with a blender from boiled beets);
  • 1/4 cup (or any fruit puree from baby food);
  • 1/2 cup brown sugar;
  • 1/4 cup cocoa powder;
  • 2 tbsp. olive oil;
  • 3/4 cup oat flour (easily made with a coffee grinder from oatmeal);
  • 3/4 tsp. baking powder;
  • 1/2 tsp. salt;
  • a pinch of vanillin;

1/2 cup chopped nuts or seeds (optional)

Preparatory step. No boiled or baked beets available? This means you need to boil it (or bake it in the oven). Then place in a blender bowl, add a little water and puree the beets.

If you suddenly end up with less than a glass of beet puree, don’t panic. Applesauce and beet puree can be used interchangeably in this recipe. If one thing is missing, let's add more of the other. By the way, the taste of beets is not felt in the finished dish.

1/2 cup (1 cup = 250 ml) oatmeal

1/2 cup walnuts

1/2 cup coconut flakes

2/3 cup cocoa without sugar

1.1/2 cups cooked beets – 1 large beet (I used canned beets)

4-5 tbsp. tablespoons almond or regular milk

4 tbsp. spoons of agave syrup or 5 tbsp. spoons of honey

1/2 teaspoon vanilla extract (optional)

Nuts and chocolate chips for decoration (optional)

Preheat the oven to 165C/325F.

Grind nuts, oatmeal, shavings.

Add cocoa.

Boil the beets, drain the water, and peel them.

Add to the general composition.

Add vanilla extract, syrup and milk.

We line the mold with baking paper and spread our thick dough.

Decorate with nuts and chocolate chips.

Place in the oven for 35-40 minutes or until light cracks appear on the surface.
