Turkey fillet cutlets. Turkey cutlets with garnish

Everyone loves cutlets. But not everyone knows how to cook them. Today I will tell you how to make juicy soft turkey cutlets. There will be no dancing with a tambourine around the stove. The recipe is extremely simple and can be used with any type of lean meat, be it chicken or beef. Go.

Turkey cutlets with a side dish of mashed potatoes. Boiled buckwheat or stewed vegetables are an option.

How to cook delicious cutlets from lean meat

I will never forget (and my husband will never forget me either) my first cutlets. They looked more like soles than something edible, both in appearance and in taste. Adding a little - or a lot - of rice to the mince helped. But the cutlets became simply crumbly. No juice.

Then bags of seasonings for cutlets appeared on sale, which you just need to fill with water, add minced meat and voila. This was exactly the salvation I had been waiting for. But what if there is no magic bag? And here I began to figure out what makes a good diet cutlet.

If you looked at the meatball recipe, you know that the minced meat should be ground as much as possible and more reminiscent of pancake dough. It is easy to combine additional components with such meat. Use no more than one egg per 500 - 700 grams of minced meat. Or take only the yolks. Egg white always makes cutlets tough. Add some liquid. This could be water, milk or cream. And if you still doubt that it will turn out delicious, use cheese. It always works flawlessly.

The book is also great as a side dish.

Ground turkey cutlets

I never recommend using store-bought minced meat, especially if it is important to get the most dietary product possible. They always try to add dark meat with fat or skin to minced meat. Better do it yourself. To do this, pass the turkey fillet through the finest sieve along with the onion or garlic. Unlike beef or veal, once is enough for poultry.

Use a small amount of tempura, breadcrumbs or breading mixture. I prefer the latter, since it contains only oatmeal and bran without salt. Oatmeal absorbs well and retains moisture. Among the spices that go well with turkey are sweet paprika (can be smoked) and black pepper. Take fresh dill or parsley. In order for the cutlets to be guaranteed juicy and not lose a drop of precious moisture, you will need batter.

You can cook minced turkey cutlets either in a frying pan or by steaming them. If you plan to fry, do it over medium-low heat with the lid on.

The principle of making minced turkey cutlets

Before you start preparing this dish, you must prepare the minced meat properly.

You can make it yourself by buying turkey meat and grinding it with onions in a meat grinder or blender.

The finished minced meat must be mixed with an egg.

To enhance the taste, many housewives add finely grated vegetables to the minced meat: potatoes, carrots.

It is also necessary to add a handful of crushed crackers to the product so that the cutlets do not fall apart during frying.

If you don’t want to mix minced meat with vegetables, you can add white bread crumbs soaked in milk (as for making regular cutlets).

You can add cheese to the meat (first grate it on a coarse grater).

Note!

Since there is practically no fat in this meat, it is quite dry.

Therefore, the best way to prepare the described dish is steaming.

Then the cutlets will turn out soft and juicy.

If you don’t have a double boiler or multicooker at hand, you can use a regular saucepan.

To cook on it, you need to install a steam grate on top.

When cooking in the oven or in a frying pan, you must ensure that the products do not lose their juice during frying.

To do this, during the cooking process using these methods, it is necessary to use a lot of vegetable oil.

I love turkey not only for all its beneficial properties, but because it is also very tasty. We met her after the birth of my daughter, when the question of complementary feeding arose. For me, as a mother, it was first of all important that the product be healthy and hypoallergenic.

I didn’t even intend to include it in adult meals, but then one day I baked a leg in the oven with garlic and away we go – fried, stewed, steamed turkey, cutlets, meatballs.

Today I will present to you my homemade turkey cutlet recipe. Turkey cutlets are airy, tender and juicy.

Surely, each of us knows about the benefits of such a dietary product as turkey meat. It almost never causes allergies, is excellent for baby food, has the least amount of calories and is highly nutritious. It contains many vitamins and minerals necessary for the normal functioning of the human body.

Turkey meat helps stimulate the human brain and cardiovascular system. In addition, it is a good antioxidant and serves to prevent various cancers. They say that this product promotes good and sound sleep, improves skin condition, strengthens bone tissue, teeth, nails and hair, and also increases male potency.

To prepare them we will need the following ingredients:

    Ingredients:

    • turkey meat (500 grams),
    • 1 large onion,
    • 2-3 medium potatoes,
    • 2 cloves of garlic,
    • a piece of white bread
    • milk (to soften that same bread),
    • salt,
    • pepper,
    • greenery,
    • butter and vegetable oil for frying.

    Cooking process:

To prepare the cutlets, you can buy ready-made minced turkey, finely chop the onion, grate the potatoes, squeeze the garlic through a press, and add the soaked loaf.

I prefer to use a turkey thigh. As a rule, there is a little fat on it, which will make our cutlets even juicier, and the bone can be hidden in sauce or a small saucepan of soup.

I also like it when the minced meat is homogeneous, so I cut the meat, onions, and potatoes into cubes and put them through a meat grinder.

I also send garlic and a soaked bun there. When it comes to greens in cutlets, I prefer dill; I chop it finely and add it to the prepared minced meat. I don’t add an egg, because the minced turkey is already “tight” and our cutlets will keep their shape perfectly. If you don’t like bread in cutlets, you can simply leave it out; they already turn out very tasty. Don't forget about spices.

Ours is ready. Now heat the frying pan, pour a little vegetable oil on it and put a piece of butter. While the oil is heating up, beat the minced meat, form it into cutlets and place it on a hot frying pan. Let them “cook” a little over high heat for a minute, no more is needed, then turn the heat down and cover the cutlets with a lid.

Fry for about three minutes and turn them over to the other side. Another seven minutes and our wonderful dish is ready.

As a side dish for turkey cutlets, you can serve mashed potatoes or rice with vegetables; turkey goes well with them.

By the way, using the same recipe you can prepare not only fried turkey cutlets, but also steamed ones - for the youngest members of your family. True, without adding pepper. These are the delicious and healthy cutlets I made.

    Bon appetit and good recipes!
