Dear readers, the berry season is long over, and with it some of our efforts to fortify the body and prepare healthy berries for future use. But if you still have some space in your freezer, I recommend filling it with berries that are about to ripen. Yes, yes, some berries can be picked just in the fall. And today we will talk about the beneficial properties of chokeberry. Its other name is “chokeberry”, or you can also find “black rowan”. Actually, from the name it is clear that the main distinguishing feature is the black fruits. And it is in these very fruits, in their juice, that all the benefits of chokeberry lie.

And if you get to know it better, you can find out why it is good for our body. The ripening period for chokeberry is considered to be the end of September - beginning of October. And although the berries acquire their black color in August, chokeberry acquires its best taste and, most importantly, beneficial qualities only with the onset of autumn, approximately when the first frosts arrive. The fact that the berries are ripe is indicated by the dark ruby-colored juice, which is released if you press a little on the berries. Then you can start harvesting the berries for the winter or using them fresh to treat certain health problems.

The chokeberry berries taste somewhat tart and have a sweet and sour pleasant taste. An interesting fact that we should all pay attention to. In 1962, the Ministry of Health included it in the list of medicinal substances.

Did you know that there is twice as much vitamin P (rutin) in chokeberries as in currants? But it is this natural compound that our body is not able to produce. Therefore, we can only receive it from the outside. And, as you understand, chokeberry is the most suitable option for this. Rutin is considered a flavonoid - a substance that slows down the aging process and has a beneficial effect on our body.

Chokeberry for hypertension, atherosclerosis and gastritis

To treat atherosclerosis, hypertension and gastritis with low acidity, you need to eat 100 g of berries every day half an hour before meals three times a day. The course is from two to six weeks, depending on the condition and improvements. Additionally, it is recommended to drink rosehip decoction or blackcurrant infusion or take medications containing vitamin C.

For hypertension, you can also drink chokeberry juice with honey. 50 g of fresh juice is mixed with 1 tablespoon of honey. Consume three times a day 30 minutes before meals for 1-1.5 months.

Chokeberry is an excellent remedy for solving certain health problems. And although it is believed that the berry itself is not very tasty, although “taste and color,” as they say... But in addition to the decoction that we talked about above, other medicines can be prepared from chokeberry. And you can’t even call them medicines, but it’s a fact: many of us like to prepare such “interpretations” of chokeberry as wine, jam and compote.

Chokeberry jam

I’ll say right away that I’m not a supporter of jam; we need to understand that we get additional carbohydrates. But again, it's a matter of our wisdom. If we don’t abuse everything, then, of course, we won’t cause harm to the body. And on cold winter evenings, sometimes you really want to have a tea party like this. Since chokeberry itself has a tart taste, to improve the taste of future jam, you can take not only chokeberry, but also some other sweet berries or plums, for example.

Blanch 700 g of chokeberry berries in boiling water for about 5 minutes, so the berries will become more tender. We do not pour out the water in which the berries were blanched. Take two and a half glasses and mix them with a glass and a half of sugar, cook the syrup. As soon as the syrup boils, throw in the already prepared chokeberry berries and at the same time add other berries or fruits (raspberries, plums, apples and even finely chopped orange peels).

Bring everything to a strong boil, stirring occasionally, remove from heat and let cool and brew for about 8 hours. It's convenient to leave everything overnight. Then bring the mixture to a boil again and leave again for 8 hours. For the third time, bring the mixture to a boil and cook over low heat for 1-15 minutes. Then we pour everything into jars and roll up in the usual way.

Chokeberry tincture

Another recipe that uses chokeberry is an alcohol tincture. It can be added to teas for adults, as it is regarded as a warming and tonic drink.

Recipe No. 1. Chokeberry tincture with cloves.

Take 1 kg of washed chokeberry berries, pour them into a jar and gently crush them with a wooden masher. Add half a kilo of sugar, 3 cloves, mix everything well. Cover the neck with gauze and leave for a couple of days at room temperature. Next, pour in alcohol - 1 liter of vodka and close with a nylon lid. We put the jar in a dark place for a couple of months. All that remains is to wait for the measured time, strain the tincture, bottle it and you can try it. Store in a cool place.

Recipe No. 2. Tincture of chokeberry with honey and oak bark.

Wash 2.5 cups of chokeberry and pour it into a jar. Add 3 tablespoons of honey and a washed pinch of oak bark. Fill everything with 1 liter of vodka, close the jar tightly and put it in a dark place for 4-5 months. Sometimes the jar needs to be “checked” - taken out and shaken. Strain the finished tincture through several layers of gauze and bottle it.

We have already talked about the timing of picking berries - this is autumn, when the first frosts have already been observed. But how to store it in order to use the beneficial properties of the berry in winter?

  1. The easiest way is to freeze it in the freezer and then add it to mousses, jams, or just eat a few thawed berries. When frozen, some of the vitamin P will be destroyed, but there will still be benefits from consuming chokeberry.
  2. But dried berries will retain all their beneficial properties and will be useful in the winter. To dry, you can not tear the berry from the shield, but string it together with a wire or rope and hang it in a cool, dry place (barn, balcony, veranda). By the way, the berries can be stored in frosty conditions, retaining all their benefits.
  3. It is also good to dry chokeberry berries. To do this, washed, dried berries are laid out on trays or small racks outdoors in the sun. You can dry the berries in the oven. To do this, first, the berries laid out on a baking sheet are dried for 20-30 minutes at a temperature of 40 degrees until the berries, when squeezed, stop releasing juice. Next, increase the temperature to 60 degrees, but not higher. Keep it like this for about 5-10 minutes. The berries should not lose their color, but still remain black. This indicates that the berries have not lost their “vitamin properties.”

Chokeberry fish. Contraindications. Harm

Aronia also has a number of contraindications for use, failure to comply with which can cause harm to the body. Chokeberry is contraindicated:

  1. With increased blood clotting and thrombophlebitis.

    Chokeberry is a small tree or lush shrub. You can meet him in many summer cottages. The berries of this shrub are good for health.     A simple recipe for chokeberry, grated with sugar

    Instead of jam and various sweets, it is advisable to enjoy grated chokeberry berries with sugar. To do this, take sugar and berries at a ratio of 1:1. Rinse them thoroughly and pour boiling water over them. Then, while still hot, grind through a sieve to a soft puree. Add sugar to it and heat it over the fire, but under no circumstances bring it to a boil, because a large proportion of the beneficial components will evaporate.     How to properly prepare juice from chokeberries

    Rinse the fruits well and chop. Then warm them up to 60 -70 degrees for twenty minutes. One liter of water is required for one kilogram of puree. It is necessary to squeeze the resulting mass, and then strain through cheesecloth. Then the juice must be heated again to 80 degrees and strained. Boil the finished juice for four minutes and pour into heated jars.

    Delicious chokeberry compote

    It is very easy and quick to prepare such a compote. Wash and steam the berries in boiling water. Then put them in sterilized jars, fill one third with boiling syrup and seal. To prepare the syrup, take half a glass of sugar per liter of water.

    Rowan wine recipe

    Wine made from chokeberry will be no less beneficial for health. We wash the berries again and chop them; this can be done using a meat grinder, mortar or other convenient method. Then you need to dilute the berry puree with boiled water in a 1:1 ratio, add one and a half glasses of sugar for each kilogram of berries. Mix the resulting mass and place it in a water seal. The wine should be kept in a warm and dry place.

    To make the preparations tasty and meet your expectations, you need to know when to pick the berries. The ideal time for removal is the beginning of autumn - September-October. Then the crop reaches its full maturity, it can be preserved for the long winter months and used as a preventive measure for various diseases.

    Important! Berries are collected by cutting off clusters of fruit with scissors and placing them in shallow containers. By hanging them in a cool place, protected from sunlight, you can have fresh fruits on hand all winter. This could be a cellar, attic, closet on the balcony. It is important that the air temperature during storage does not rise above 5°C.

    If you want to get a berry with the maximum concentration of nutrients, pick it after the first frost. It is then that it acquires its best taste. Now let's figure out what can be made from chokeberry.

    Recipes for chokeberry jam

    The first thought that arises when you want to prepare chokeberry is jam. There are many options for making jam from this berry, but the preparatory stages of their preparation are approximately the same.

    Did you know? People often call chokeberry chokeberry, and its scientific name is chokeberry, more precisely, chokeberry Michurin. It has an incredibly high content of vitamin C, almost as much as lemon. And there is twice as much vitamin P as in black currants. It also contains a huge amount of iodine - four times more than gooseberries and raspberries.

    When the time comes to make chokeberry preparations for the winter, it is important to properly heat treat the berries. It turns out that the fruits are dry, so before boiling them, it is recommended to soften them a little. This is done by sequentially lowering them for 3 to 5 minutes, either in boiling water or in cold water. After the procedure, the fruits are poured into a colander, allowed to drain, and only after that they begin to prepare jam or other preparations.


    It is not beneficial for preparing the mixture, because hard rowan berries take a long time to cook. First, add half a kilo of sugar to half a liter of water and prepare syrup. They pour it over berries prepared according to the principle mentioned above and put it on the fire. When the mass boils, keep it on the fire for about five minutes, stirring constantly, and then remove and leave for about 8 hours or a little more. This time is necessary for the berries to be saturated with syrup. After this, the rest of the sugar is added to the mixture and the container is again put on fire. Stirring, cook until the syrup thickens.

    The jam is placed in jars and covered with lids, usually metal ones. Can also be covered with polyethylene. Some housewives even cover the jars with film and fasten them with twine soaked in water. When it dries, it contracts, creating a tight seal.

    Chokeberry jam can be made without sugar. It is especially useful in this form for people suffering from diabetes. To prepare it, take a large container, place a rag on its bottom, and place jars filled with prepared berries on top. Water is poured into a container so that it reaches the hangers of the cans, and brought to a boil over low heat. As the berries settle in the jars, you need to add them little by little. The cooking process takes about 40 minutes. When the jam in them is ready, take out the jars one by one and roll them up.


    In this case, take half chokeberries and half apples. Apples also need to be blanched for at least three minutes in boiling water. From the water remaining after this procedure, syrup for jam is prepared: put the water on the fire, add sugar and, when it is completely dissolved, remove from the heat. Add berries and apples to it and leave them for four hours. Then they put it on the fire, cook after boiling for about five minutes and let it brew again for three hours. This is done several times until the berries soften. Only after this can you put the mixture into jars and roll up the lids.

    Chokeberry can be prepared not only on its own; recipes often involve adding other fruits and even nuts to the jam. To prepare such an unusual jam, you need to take a kilogram of chokeberry, 300 g of Antonovka apples, 300 g of walnuts, lemon and one and a half kilograms of sugar.


    Prepared berries are poured with boiling water overnight. In the morning, take this infusion and add sugar to prepare syrup. Place berries, crushed nuts, chopped apples into a boiling solution and cook in three steps for 10 minutes. Prepare the lemon in advance: scald, peel, cut and remove the seeds. During the last cooking of the mixture, this is also added. When the jam is ready, cover the container with a cotton cloth, close it with a lid of the same diameter and leave until the berries soften. Then the jam is put into jars and rolled up.

    Chokeberry jam

    Chokeberry is prepared in different ways; recipes for the winter also involve making jam or, as we used to call it, marmalade. For this you will need about half a kilo of sugar and a kilo of berries. The fruits are prepared for cooking, then poured into a container and covered with sugar. They must be left until they release their juice. This usually takes 3 – 5 hours. After this, place the container on the stove, bring the contents to a boil, reduce the heat and cook for exactly an hour, stirring constantly.

    When the mixture has cooled, rub it through a sieve or grind the berries with a blender. The future jam is put back on the fire and boiled until it thickens. Place hot into sterile jars and seal. Used as a dessert or base for sauces.

    Did you know? If you have a freezer or bulk freezer, the berries can be frozen. To do this, you need to wash them, dry them, separate them from the stalks, divide them into portions and put them in the freezer.

    Recipes for chokeberry compotes

    In winter, chokeberry compotes can be prepared from frozen berries, or you can use canned ones from the fall. There are several interesting recipes for making chokeberry compote for the winter.


    The easiest recipe for making compote is to pour hot syrup over the berries once. Berries prepared for canning are scattered into jars to a third of their volume. Then prepare a syrup from water and sugar in a 2:1 ratio: sugar is diluted in water, brought to a boil and boiled for about 5 minutes. The syrup is poured hot into jars with berries, and immediately rolled up with metal lids. The jars are turned over, wrapped and allowed to cool. After which the workpieces can be lowered into the cellar.

    You can prepare compote in another way. Pour boiling water over the berries poured into the jars, and then pour the entire contents into the container along with the berries. The mixture is boiled until the berries burst, after which sugar is added and boiled for 10 minutes. Only then the compote is poured into jars and sealed. However, it is believed that with this method of preparation many useful substances are lost.

    A compote of chokeberry and sea buckthorn would be great for the winter. To do this, take the berries in a 1:2 ratio, wash, peel and lay them out on a clean towel. While the berries are drying, steam the jars and cook the syrup: add 130 g of sugar to 3 liters of water. The berries are placed in jars so that they are one third full, and then filled with syrup to the neck. The filled jars are placed in a container of water, which is brought to a boil and kept in this state for half an hour, if the jars are three-liter - 20 minutes, if the jars are two-liter - 10 minutes. Then they roll it up, turn it over, wrap it up and keep it like that for several days.

    Important! In winter, compote can also be prepared from dried berries. To do this, they can be washed, separated from the stalks, laid out in one layer on paper and dried, stirring occasionally. The room where they are dried must be ventilated with a temperature not exceeding 50°C. When using ovens, the beneficial properties of the berries are lost.

    Compote of chokeberry with citrus fruits

    Assorted compote turns out great, especially if citrus fruits are added to it. The most popular is chokeberry compote with lemon, the recipe for which is given below. The basic cooking process is the same as described above, only lemon slices are added to the jars along with the berries. You can add an orange or two citrus fruits together. Then the jars are poured with boiling water, allowed to brew for five minutes, the water is poured into a separate pan, in which syrup is prepared at the rate of two glasses of sugar per jar. The syrup brought to a boil is poured into jars with berries and citrus fruits and rolled up with lids. The jars are turned over, left overnight, and lowered into the cellar in the morning.


    Chokeberry syrup is considered healthy and tasty. To do this, take pre-prepared but already dried chokeberry berries and pour them into three-liter jars up to the shoulders. Add three tablespoons of citric acid (30 g) and pour boiling water up to the neck. Cover the tops of the jars with gauze or a saucer and leave for a couple of days.

    After this period, the water is poured through a strainer into a pan, sugar is added at the rate of one and a half kilograms per three liters of water and put on fire. The syrup must be constantly stirred and heated until the sugar melts; it is not necessary to bring to a boil. When the sugar dissolves, remove from heat and let cool. The finished syrup is poured into sterile containers, covered with lids and sent to a dark, dry place. It doesn't have to be cold. Even in a warm room, the syrup can be stored for several years.

    Chokeberry juice

    Aronia juice will also be beneficial. To prepare it, you will need a liter of fresh chokeberry juice, a liter of apple juice and about 50 g of sugar. The juices of berries and apples are mixed, heated, sugar is added, put on low heat and brought to a boil. Then they pour it into jars and roll up the lids. The jars must first be sterilized for less than 15 minutes.


    Lovers of strong drinks prepare wine from chokeberry, which pleasantly pleases not only with taste, but also with color. In addition, 200 g of this drink per day will fill the body with a huge amount of nutrients and vitamins, normalize blood pressure, improve intestinal function, sleep, and vision. To prepare wine, take a 10-liter bottle and pour 2 kg of berries into it, which were previously crushed in a meat grinder. One and a half kilograms of sugar are poured in there. The more berries there are, the richer the drink will be. Sometimes a handful of raisins or gray rice is thrown in for taste; they also contribute to a more active formation of wine yeast. A medical rubber glove is pulled over the bottle, the middle finger is pierced, and it is placed in a warm, dark place. Shake every day without removing gloves.

    After three days, two liters of cold boiled water and a glass of sugar are added to the bottle. Then it is covered again with a glove and returned to its place, shaking it every day. The procedure is repeated two more times every 10 days. The wine will be ready in 33 days.

    If rice or raisins were not added to the mixture, then the first procedure should be done after 10 days, when yeast is formed. This wine takes 40 days to prepare. You can drain it when the glove is down. If it is inflated, you need to wait a few more days.

    The drained wine should be allowed to brew for a couple of days. Then it is poured into a container so that no sediment gets in. The manipulations are repeated every 2–3 days until a completely clear wine is formed. You can store it in a jar or bottle with a lid.


    Homemade chokeberry preparations can be stronger. To prepare a berry liqueur, the washed fruits are poured into a three-liter jar up to the shoulders, half a kilo of sugar is added and poured with vodka. There should be 2 cm of free space from the edge of the neck. As a rule, a three-liter jar requires one and a half kilograms of berries and a little more than a liter of vodka. The jar is covered with parchment paper folded in three layers or a nylon lid and lowered into the cellar or placed in the refrigerator. After two months it can be taken out and bottled. The tincture is also stored in a cool place.

    Aronia vinegar

    U Chokeberry vinegar is rich in beneficial substances and gives dishes a special aroma, taste and color. To prepare it, you need to wash the berries, chop them and add water in a 1:1 ratio. Then per liter of mixture add 20 g of dried black bread, 50 g of sugar, 10 g of dry yeast. The liquid is left to ferment at room temperature for 10 days. After this period, 50 g of sugar is added to it. After a couple of months, the vinegar is ready. It is bottled, corked and stored in a dark place.


    The fruits of chokeberries make delicious marmalade. Take ripe berries, preferably those that have already been frozen. Wash them, remove them from the stalks and blanch them in salted water. Place in a saucepan, add a little water and boil the berries. After this, they need to be slightly mashed, rubbed through a sieve and the puree put back on the fire, adding sugar. Stirring continuously, cook the mixture until it thickens. For 2 kg of berries you will need about a kilogram of sugar.

    While the mixture is cooling, take a baking sheet, cover it with parchment and sprinkle with sugar. Place the cooled mixture on it and place in a hot oven. The marmalade is kept in it until a crust forms. When you take it out, sprinkle with powdered sugar and vanilla, cut into pieces and store in a closed container.
