To prepare this pie we use pancakes, and to make them especially tender, we use a secret - we will cook them with the addition of sparkling water.

Ingredients

Pancakes: eggs (3 pcs.), milk (1 cup), sugar (1/2 tsp), sparkling water (half a glass), flour, melted butter (¼ cup each).

Filling: wild mushrooms (or champignons) 500 grams, chicken broth (1 glass), butter (3 tablespoons), dry vermouth (2 tablespoons), onions (2 pcs.), garlic cloves, salt, pepper, cream (quarter cup), sour cream (1 cup), grated cheese, dill, breadcrumbs (three spoons), butter (2 spoons).

Cooking method

Mix the ingredients for making pancakes and fry the pancakes, stack them. For the filling, cut the peeled mushrooms and fry them together with the onion and garlic until the onion is soft. Pour in vermouth and simmer for another 2 minutes, season with salt, pepper, add sour cream, cream and half the cheese, simmer over medium heat for another 5 minutes. The sauce should be very thick.

We form the pie by alternating pancakes and filling. There should be a pancake on top. Grease it with the remaining mixture and sprinkle with cheese and dill, breadcrumbs and place pieces of butter on top of everything. Place in the oven for 15 minutes at 200 degrees.

  1. Break the egg into a small container and beat it well with a fork (whisk);
  2. Add softened butter to the egg container and mix well.
  3. Then add cold water, salt and flour. Knead soft and tender dough for an awesome pie.
  4. Next, let's prepare the filling. Fry mushrooms for the pie with onions. Leave the fried mushrooms until they cool completely.
  5. Grate the cheese.
  6. Finely chop the fresh herbs using a knife.
  7. Take a springform pan with a diameter of 24*26 centimeters. We put the dough into the mold and distribute it over the mold so that there is a bottom and sides made of dough.
  8. Place the mushroom filling into the dough pan and distribute it evenly.
  9. Sprinkle the top of the pie with finely chopped herbs and grated cheese.
  10. We put the form in the oven. Bake the cake for 20-25 minutes at a temperature of 220 degrees.

1. Of course, you should start with a test. In this case, the recipe for making a pie with mushrooms from yeast dough has one feature: it is prepared without eggs. If you wish, you can make the dough according to any other favorite recipe. So, combine the yeast with sugar and a small amount of warm water. Leave for 5-7 minutes. Then add salt, vegetable oil, flour and remaining water. Knead a soft dough (do not be lazy to spend at least 10-15 minutes on this). Then cover with a clean towel and keep warm. After an hour, you need to knead the dough a little and let it rise again.

3. Roll out the dough quite thin and place it on a greased baking sheet so that about half of it lies. Spread the filling over the entire surface (leaving a little space around the edges). If desired, you can add a little greenery, for example.

4. By this time, preheat the oven to approximately 200 degrees. Carefully cover the filling with the other half of the dough, sealing the edges.
