We will need:

  • egg - 4 pcs.
  • sour apples - (4 large or 12 small)
  • sugar - 150 g
  • flour - 150 g
  • vanilla sugar - 1 sachet
  • orange zest - 1 pc.
  • full-fat sour cream - 2 tsp
  • cinnamon - to taste

Cooking method:

1. Initially, start with apples; it is better to take garden ones from your garden, or buy them at the market, than to use imported ones. Wash them well and remove all unnecessary items. 🙂 This is a core of seeds and parts at the top and bottom using a special device or an ordinary table knife.


2. Now cut like this as shown in this picture. The thickness of the slices should be approximately 5-6 mm.


3. To prepare the dough, take the largest eggs, preferably C0. Take and break them into a mixing bowl, add a pinch of salt. At this moment, you can already turn on the oven to warm up to a temperature of 180 degrees.


4. Beat the eggs at medium speed for a very short time, then add vanilla sugar, gradually increase the beating speed and add granulated sugar. Beat for 5-7 minutes until the mixture is fluffy and the sugar has dissolved.


5. The mass has become fluffy and white, now pour in the flour. The secret ingredient is a couple of spoons of sour cream. Finely grate the zest of one orange and add to the rest of the ingredients. Using a spatula, mix very gently using top-to-bottom movements.

Important! Sift the flour through a sieve to make it airy.


6. You will get such a cool, tender mass!


7. Now take a springform pan with a diameter of 18 cm. Cover it with paper and grease it with butter or vegetable oil. Sprinkle with a little sugar.


8. Place the apples at the very bottom, sprinkle them with cinnamon for flavor, and pour the dough over them.

  • Apples - 3-4 pieces
  • Puff pastry – 400-500 g
  • Ground cinnamon, sugar - to taste
  • Semolina – 1 tbsp. spoon (for filling)

Apple pie with sour cream filling (Tsvetaevsky pie) is one of those recipes that is both quick to prepare and has excellent taste. It may not be the most dietary, but today we’ll close our eyes to that :)

This is the recipe for the Tsvetaev sisters' pie, which they treated their guests to. The recipe is quite simple, and we will look at the step-by-step preparation of this dessert. If you have any questions about making this apple pie, write in the comments.


Ingredients:

Apples– 500-700 gr (3-4 apples)

For the test:

  • Butter - 150 gr
  • Sour cream - 100 gr
  • Wheat flour - 200 gr
  • Baking powder - 1.5 teaspoons (can be replaced with baking soda - 0.5 teaspoons, which we quench in any acid - a little sour cream or vinegar)

Sour cream filling:

  • Sour cream - 200 g.
  • Chicken egg - 1 pc.
  • Sugar - 150-200 g (2 faceted glasses).
  • Flour - 2 tbsp. spoon
  • Vanilla sugar – 1.5 spoons, optional

Let's start cooking:

Wash the apples. Warm the oil to room temperature. Sift the flour in advance.

Making the dough:

Melt 150 grams of butter in the microwave or in a saucepan and let it cool slightly.

In the meantime, add 2 cups of flour (200 g) to the container.


Add 1.5 tablespoons of baking powder and mix.


Pour in warm butter.


And add sour cream.


Mix. From the resulting mixture, begin to knead the dough with your hands.


You should get a soft, homogeneous dough.

Wrap the resulting dough in film and place it in the refrigerator for 20-30 minutes.


In the meantime, we’re making the filling for our Tsvetaeva apple pie.

Fill:

Break the egg into a clean container.

Take a full glass of sugar (approximately 150 g), if you want a sweeter pie, you can add a little more.


You can also add one and a half tablespoons of vanilla sugar. Stir, beat with a whisk or mixer until smooth. Sift the flour.


Add sour cream.

It's great to add a little vanilla. Initially, of course, this component was not in the Tsvetaevsky pie recipe, but this will help make the pie even tastier.


Mix and beat with a mixer for 2 minutes, or with a whisk.


Preparing the dough for the mold:

Grease the baking dish with butter or vegetable oil, if it does not have a slippery top layer. Sprinkle the pan with a little flour, this is the so-called “French shirt”, it is needed so that we can take out the apple pie without difficulty.

It is better to use a form with low sides, since in a high form the filling may remain liquid after baking.

We take the dough from the refrigerator, roll it out to a thickness of about a little less than a centimeter and put it on a mold previously lined with tracing paper, form small sides, make the height of the sides small, about 3-4 cm.


Let's prepare the apples:

The cream and dough are ready, let's take on the apples. It is best to cut them right before you send the apple pie to bake.

If you have already cut the apples before preparing the dough and filling, you can pour lemon juice over them, then they will not have time to darken

Take 500-700 grams (3-4 apples) of green apples. Sour varieties are suitable for this recipe; it is better to take “Antonovka”.

Peel off. Clean out the core.


For Tsvetaevsky apple pie, you need to cut the apples into long, very thin slices less than 0.5 centimeters.

You can use a chip grater or use a regular wide grater.


Place the slices on the dough.



Fill with sour cream.


Distribute the cream evenly.


You can decorate the apple pie with nuts or other favorite ingredients. We can sprinkle it with cinnamon.

To make the cake crumbly and tender, you need to maintain proportions and combine the ingredients correctly. You can even add a little sour cream, starch and spices to the dough. Let's take a look at this simple and wonderful recipe with step-by-step photos!


Ingredients:

  • Apples – 4-5 pieces
  • Flour – 500 g
  • Sugar – 3/4 cup
  • Eggs – 3 pcs.
  • Butter – 200-250 g

Beat the butter. You can use margarine. Gradually add sugar.


Add 3/4 cup sugar. Beat until fluffy, 3-5 minutes.


We separate the eggs into whites and yolks. We put the whites aside for now. Add 3 yolks to our butter and beat. Add 2 cups of flour. Knead our dough.

  • Flour – 1 cup

In the time allotted to me, I prepare the filling. I remove the seeds from the second kilogram of fruit and chop it into small pieces. I sprinkle the cottage cheese with sugar and grind it.

I lower the risen dough and immediately roll out two cakes from it. I place the first cake in a greased pan, and place a ball of half the apple slices on top of it. Then I distribute the cottage cheese, and then lay out the remaining fruit. I cover everything on top with a second cake layer. I pinch the edges of the dough tightly and put it in the oven for 30 minutes. Heat it at 180C.

This aromatic pie, baked according to a traditional recipe, is served cold. This pastry turns out to be quite large and easy to take with you when you go for a walk in the park.

I prepare this delicate delicacy in a silicone mold, the diameter of which is 25 cm. Therefore, the calculation of products is based on this volume.

Products needed for the test:

  1. wheat flour – 250 g;
  2. butter – 125 g;
  3. sour cream – 1 tbsp. spoon;
  4. sugar – 80 g;
  5. vanillin – 1 package.

List of products for filling:

  • Antonovka apples – 6 medium apples;
  • sour cream – 250 g;
  • sugar – 150 g;
  • flour – 2 tbsp. spoons;
  • vanilla sugar - 1 package;
  • chicken egg – 1 pc.

Cooking step by step:

I always start cooking by kneading shortcrust pastry. Sift the flour into a deep bowl. Next I add vanillin (can be replaced with cinnamon), sugar and mix. I grate the butter removed from the freezer onto a coarse grater directly into a bowl and knead until crumbs appear. In this state, I place the dough base in the refrigerator for 10-13 minutes.

After the allotted time has passed, I take out the container and grind the mixture into fine grains with my hands. I pour heavy sour cream into it and quickly knead the dough.

I choose baking dishes with high sides, since when placing the dough in it, we form the sides at least 4 cm. Additional cooling of the base already placed in the mold helps me make shortcrust pastry even more tasty. To do this, I wrap them in cling film and refrigerate them for another 20-30 minutes.

While the dough is simmering, I prepare the filling. Using a mixer, thoroughly beat the sour cream with eggs, flour, sugar and vanilla. I cut the washed apples in half and remove the cores. Then I cut it into thin slices. I generally don't peel the fruit, but if it's very thick or damaged, it's best to get rid of it.

After half an hour, carefully place the slices in a circle in a cooled form with dough. I pour sour cream on top and put it in an oven preheated to 180C for about an hour. The time depends on the oven; after 40 minutes you should check to see if it’s done.

The pie, prepared according to Marina Tsvetaeva’s recipe, is served and cut completely cold, otherwise its unique filling will leak out. The pie should be stored in the refrigerator, although given how delicious it is, it is unlikely that it will survive that long!

  • sugar – 150 g;
  • sunflower oil – 1.5 tbsp. spoons;
  • butter – 60 g;
  • walnuts – 100 g.
  • Cooking quickly and easily:

    I sift the pancake flour, add baking powder and mix. In an enamel container, grind the eggs with sugar using a fork. Then I add the prepared flour there and mix again. I add milk, cognac and vegetable fat to the already obtained mixture and thoroughly beat it in again and set aside.

    I start the oven to warm up to 200C. I wash the fruits and thoroughly peel them. Without dividing into halves, I cut them into thin slices using a hand grater. I grind the nuts in a blender.

    Pour the finished dough into a bowl with apples and mix gently so that the pieces do not break. Then I transfer it to a small form and bake for 25 minutes.

    When the time is up, I take out the pie and sprinkle chopped nuts on top. Then I put it back in the oven for another 10 minutes.

    Important! Under no circumstances should we remove hot baked goods from the pan immediately after cooking. Leave it in the mold until it cools completely.

    There is no need to decorate the “Invisible” cake; it already looks very fascinating. And the delicate texture of the baked goods gives the feeling of the delicacy melting in your mouth.

    Apple pie charlotte with apples, grapes and condensed milk in the oven

    Charlotte prepared with condensed milk turns out to be very interesting and unusual. I mastered this recipe recently, but my men already love it.

    To prepare you need to stock up:

    • apples – 2 pcs.;
    • white grapes – 150 g;
    • lemon;
    • flour - 1 tbsp;
    • chicken eggs – 2 pcs.;
    • vanilla sugar - 1 package;
    • condensed milk – 1 can;
    • soda – 7 g;
    • powdered sugar.

    Simple cooking method:

    I wash the grapes and apples thoroughly and let them dry. Then I separate the grape bunch into individual berries, and peel the fruit from the core and cut it into slices. I turn on the oven so that it warms up to 180C.

    In a bowl of suitable size, beat the eggs with condensed milk and mix them with a whisk. Then add sifted flour, vanilla sugar and soda slaked with lemon juice to the resulting mixture. I carefully mix everything until smooth.

    I pour the dough into a silicone mold, lay apples on top in a circle, and fill the middle with grapes.

    The charlotte is baked for about 35-40 minutes. After it has expired, the mold is taken out of the oven and placed on the window to cool.
