It is very convenient to bake a whole bird in a special roasting bag or in foil. Or you can just put it in a deep oven tray. It can be stuffed with oranges or apples.

Ingredients:

  • turkey - 5-6 kg.
  • walnuts - 500
  • apple - 5 pcs.
  • onion - 2 pcs.
  • sour cream - 1/2 tbsp.
  • pomegranate sauce - 200 gr.
  • spices
  • salt - 1/2 tbsp.
  • sugar - 1/2 tbsp.

Recipe:

First you need to choose the right bird. We go to the market and try to buy a fresh, home-made, steamed carcass. If you don’t have one, then buy chilled poultry. Preferably medium size 5 - 6 kilograms.

Homemade turkey baked in the oven turns out very tasty, juicy and attractive in appearance. It is better to bake it whole.

The carcass should be meaty, the breast and legs should be thick. The skin should be light, without dark spots, with a yellowish tint. Check the freshness by pressing your finger on the carcass; if the dent is quickly restored, then the meat is fresh.


In order for us to get a juicy turkey, it needs to be marinated. To prepare the marinade, take salt, sugar, spices. Dissolve in water. Take a large container, place the bird, and pour in enough brine. Leave for 10-12 hours. This soaking will preserve all the flavor and juice of the meat during its cooking.

While our bird is marinating, it's time to prepare the filling. Since we are preparing the dish for guests for the holiday, we will choose a tasty filling. We will cook apples in walnut and pomegranate sauce.


Peel the walnuts and grind them using a rolling pin or blender. Cut the onion into small cubes, fry in sunflower oil until golden brown.


Take a sunny ripe apple, cut it into slices, and fry it in boiling butter with sugar, add cinnamon, cloves, and black pepper. This combination gives an unimaginable Persian aroma.

In a large bowl, add chopped nuts, fried onions, add pomegranate sauce and mix well.


The result was nut and pomegranate minced meat; the consistency should be like meat. If too thick, add pomegranate sauce.


Take a piece of minced nuts in your palm and place a fried apple slice inside.

Turkey fillet with apples baked in foil

Take note of the recipe for preparing low-calorie and dietary turkey fillet with fruit. Fruits not only add aroma and taste to meat, but also make it juicier and softer.


Ingredients:

  • turkey fillet ̶ 4 servings
  • bacon ̶ 4 slices
  • green apple ̶ 1 pc.
  • vegetable oil - 3 tbsp. l.
  • butter ̶ 50 gr.
  • tomato paste or ketchup ̶ 2 tbsp. l.
  • salt, pepper to taste

Preparation:

  1. Beat the poultry fillet moderately; it should not be very thin. Salt and pepper.
  2. Heat vegetable oil in a frying pan and fry the fillet on both sides until golden brown, and transfer to foil. Place bacon on top.
  3. Cut the apple into 4 parts and fry in butter.
  4. Place on bacon, top with tomato paste, drizzle with melted butter used to fry the apple, and wrap everything in foil.
  5. Bake in a hot oven. When the foil is inflated, cut it and immediately serve the dish.

This is not the only way to cook turkey with fruit; you can bake turkey fillet with pineapple and cheese and oranges, or with cranberry sauce.

Turkey with honey in a baking sleeve

  3. Thoroughly rub the bird inside and out with this mixture, leave it for 1 hour to soak.
  4. In another bowl, mix honey, orange liqueur and mustard.
  5. Coat the bird with this mixture and carefully place it in a baking bag. Tie the bag with special clips. And place in the oven for 2 hours at 180 degrees.


Before serving, chop the finished bird into portions. Serve with honey sauce.

Turkey with potatoes in French


This is an exquisite second course that can be prepared for both everyday lunch and festive dinner. It's quick and easy to prepare.

Ingredients:

  • turkey fillet ̶ 1 kg.
  • potatoes ̶ 8 pcs.
  • tomato - 2 pcs.
  • red onion - 2 pcs.
  • parmesan ̶ 200 gr.
  • sour cream ̶ 100 gr.
  • salt to taste
  • vegetable oil - 2 tbsp. l.
  • seasoning for poultry (thyme, rosemary, thyme, basil).

Preparation:

  1. Cut the turkey fillet into small pieces, pound lightly on both sides. Pepper and salt the meat, add your favorite seasonings. Heat vegetable oil in a frying pan and lightly fry the fillet on both sides.
  2. Peel the onion and cut into thin rings. Pour 1/2 cup water into a bowl, add 1/2 teaspoon salt and sugar, add vinegar. Place chopped onion in this marinade for 15 minutes, then gently squeeze it out.
  3. Cut the potatoes into slices 1 centimeter thick. Season with salt and pepper, and if desired, add garlic squeezed through a press.
  4. Cut the tomato into slices 1 centimeter thick.
  5. Grate the cheese on a coarse grater.
  6. Take a baking sheet with high sides, grease with vegetable oil, and lay out in layers: fried meat, pickled onions, potatoes, tomatoes. Grease everything generously with sour cream, cover the top with baking paper.
  7. Place in the oven for 30 minutes at 180 degrees.
  8. Remove the dish, remove the paper, sprinkle with cheese and place back in the oven for 10 minutes. As soon as the cheese melts and a beautiful, appetizing crust forms, the dish is ready.


Turkey drumstick stewed with vegetables in the oven

Turkey drumstick in the oven prepared according to this recipe is a truly exquisite dish, with tender juicy meat and a crispy crust. The drumstick can also be cooked in foil or in a baking sleeve.

Ingredients:

  • turkey drumstick - 2 pcs.
  • potatoes ̶ 6 pcs.
  • tomato - 2 pcs.
  • onion ̶ 2 pcs.
  • zucchini ̶ 1 pc.
  • bell pepper ̶ 1 pc.
  • carrots ̶ 1 pc.
  • salt to taste
  • ground black pepper ̶ 1/2 tsp.
  • butter ̶ 50 gr.
  • olive oil ̶ 1 tbsp. l.
  • poultry seasoning

Preparation:


First prepare the marinade. Place melted butter in a bowl and all your favorite poultry spices. Mix everything.


Finely chop the onion into cubes and add to the seasonings.


Take the drumstick. In order for the marinade to saturate the meat well, the skin must be carefully pulled off, try not to damage it. Trim the film and pull the skin off the shin.


Prick the drumstick meat with a knife or make small cuts. Rub the prepared marinade onto the leg, pressing the marinade into the cuts.


Then pull the skin back over the shin and rub it over the top.


Spread the remaining marinade generously onto the meat and leave to marinate for 1 hour.

Our drumstick is ready for baking. It can be baked this way. A good side dish for this drumstick is mashed potatoes and sour cream sauce.

Today we are preparing drumsticks with vegetables. Chop all the vegetables. Cut the zucchini, potatoes and carrots into rings, the onion into half rings, and the tomato into quarters. Salt, pepper, add olive oil.

Grease a baking dish with vegetable oil, place the turkey drumstick and place in the oven for 40 minutes at 180 degrees. As it bakes, baste the drumstick with any of its juices and turn it over.

When a slight crust appears, remove the pan from the oven and place the prepared vegetables around the meat. Bake for another 20 minutes, do not forget to baste with juice.

Turkey baked with apples and prunes


Ingredients:

  • turkey ̶ 5 kg.
  • apples ̶ 500 gr.
  • prunes ̶ 500 gr.
  • white wine - 3 tbsp. l.
  • sour cream for lubrication
  • salt to taste
  • cinnamon ̶ 1 tsp.
  • pepper ̶ 1/2 tsp.
  • sugar ̶ 1 tbsp. l.
  • breadcrumbs ̶ 1 tbsp.

Preparation:

  1. Put your favorite spices and seasonings in a bowl, add sour cream, mix everything. Rub this mixture all over the bird inside and out.
  2. Cut the apples into medium cubes.
  3. Rinse the prunes well in hot water and mash them a little with your hands.
  4. In a separate bowl, place chopped apples, prunes, crackers, cinnamon, sugar, add white wine and mix gently.
  5. Stuff the turkey with this mixture. The hole can be sewn shut or held together with wooden sticks.
  6. Place back down on a baking sheet, brush with sour cream.
  7. First brown the bird in the oven at 200 degrees, then reduce the temperature to 180 degrees.
  8. Fry until fully cooked, 2 to 4 hours, depending on the size of the bird. From time to time, pour over the resulting juice.

Why with chestnuts? Products that are non-traditional for Russian cuisine are increasingly appearing in stores. I became interested myself. I bought it and tried it. Cooked and fried. I really liked the roasted chestnuts. The taste is unusual. Chestnuts can be used as a side dish, replacing pasta and mashed potatoes. They go well with mushrooms, sweet potatoes, carrots, cabbage and Brussels sprouts. And then the idea came to stuff the turkey.

Ingredients:

Preparation:

  1. Finely chop the leek and garlic and fry in a frying pan.
  2. Then cook the chestnuts. Don't forget to make an X-shaped cut in advance.
  3. This is done so that during cooking or frying they do not explode from internal pressure.
  4. To do this, put them in a saucepan and fill with cold water, after the water boils, cook for 4 minutes, then take out one at a time and immediately peel and remove the inner film. Nuts can be roasted in the oven. Cover a baking sheet with baking parchment, lay out the nuts and bake at 200 degrees. The peel will open up and peel easily. Leave some of the roasted chestnuts to decorate the dish.
  5. Next, prepare the sweet potato puree. Cook like regular potatoes, puree, salt, pepper, add butter.
  6. In a large bowl, carefully combine chestnut puree, mashed potatoes and roast.
  7. Fill the turkey with this stuffing and secure the edges of the belly with chopsticks.

You can cook turkey in the oven in foil, in a sleeve and in a baking dish. Typically, this process takes about an hour.

Three simple examples of dietary turkey fillet cooking in the oven:

  • Method two - up your sleeve. Wash 600 g of turkey fillet, dry, rub with a mixture of two teaspoons of adjika with a pinch of black pepper and a small amount of salt. Make ten to fifteen punctures in the meat and stuff it with three to four peeled, chopped cloves of garlic. Pack the prepared fillet into a sleeve and place on a wire rack in a cold oven. Place the tray down, turn on the heat and bake for an hour at 200 degrees.
  • Method one - in foil. You will need a kilogram of fillet, two or three cloves of garlic, a little red and black ground pepper, and less than a teaspoon of salt. Rinse the turkey, dry with a paper towel, rub with a mixture of peppers, crushed garlic and salt. Then wrap the prepared fillet tightly in foil and place in the oven for 25 minutes at 220 degrees. Then turn off the heat and leave the turkey in the oven for two hours without opening the oven door.
  • Method three - in the shape of. You will need 800 g of fillet, 100 g of leeks, a bunch of parsley, two cloves of garlic, a jar of natural yoghurt and half a liter of fermented baked milk. Place thinly sliced ​​leeks on the bottom of the baking dish, and place turkey meat divided into portions on it. Sprinkle chopped parsley and chopped garlic on top, add yogurt and pour fermented baked milk over everything. Marinate in the refrigerator for two to eight hours, after which bake for an hour in an oven heated to 180 degrees. The energy equivalent of such a dish is only 72 kilocalories per hundred grams.

The perfect protein meal

Turkey fillet baked in the oven with hot and spicy seasonings perfectly meets the requirements of fitness diets: it contains few calories, a lot of protein that nourishes muscles, and spices speed up metabolism and stimulate fat burning processes. The tender meat is so easily digestible that it is practically has no dietary contraindications.

Cooking method:

  1. Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
  2. After 2 hours of marinating, remove the turkey fillet from the water, pat lightly with napkins, and stuff with chopped garlic cloves. You can use more garlic.
  3. Prepare a homogeneous mixture of all seasonings and vegetable oil. Brush the meat thoroughly on all sides with this mixture.
  4. Preheat the oven to 250 degrees. Please note - it is very important to preheat the oven.
  5. Place the meat on a baking sheet in a preheated oven and cook for exactly 15 minutes.
  6. After 15 minutes, turn off the oven and, without ever opening the oven door, leave the turkey breast fillet in the cooling oven for 2 hours.

So, within 2 hours, the turkey will be fully cooked in the turned off oven. It will have a baked crust and will be very juicy inside. Perhaps the meat will be pink inside, but this should not scare you - it should be so - just try it, it is amazingly tasty.

Recipe No. 2. Spicy turkey breast fillet baked in the oven in foil

This recipe is even simpler than the previous one, but it is suitable only for those who like it spicy, because it involves adjika, red pepper and garlic (just a nuclear mixture!). If you don’t really like spicy dishes, then instead of red pepper, take black pepper, and smaller ones, and instead of adjika, you can use regular, non-spicy ketchup or tomato paste. Do not skimp on the garlic; stuff the turkey with it “lengthwise and crosswise”, making deep cuts with a sharp knife and pushing the pieces of garlic deeper inside.

Ingredients: 1.5 kg. turkey breast fillet, adjika - 2 tablespoons, garlic - 5 cloves, vegetable oil - 2 tablespoons, red hot pepper - 0.5 teaspoons, salt - 2 teaspoons (flat), water for soaking the turkey.

Cooking method:

  1. Pour water into a saucepan, dilute salt in water, and place a washed, skinless turkey breast in the water. Let it marinate in this brine for 2 hours.
  2. After 2 hours of marinating, remove the turkey fillet from the water, pat dry with a paper towel, and stuff with garlic.
  3. Prepare a mixture of adjika, vegetable oil, hot red pepper, and coat the meat thoroughly with this mixture.
  4. Wrap the meat in foil and place in the oven for 30 minutes. The oven should be preheated to 200 degrees.
  5. After 30 minutes, turn off the oven, leaving the meat inside, without opening the oven door, and let the meat stand for another hour and a half.

Recipe No. 3. Turkey fillet in the oven with potatoes

Great recipe, very simple and very tasty. There are a minimum of ingredients (to simplify the recipe, I am giving here a very ascetic option - basically just turkey and potatoes, but in the next recipe I will show what other vegetables can be added to this recipe, besides potatoes). This dish is best prepared in a sealed baking bag.

Ingredients: 1 kg. turkey breast fillet, potatoes - 6 pcs., onions - 1 pc., carrots - 1 pc., salt, ground black pepper, 2 tablespoons of vegetable oil. Optional: 300 grams of whole mushrooms.

Cooking method:

  1. Chop the onion and grate the carrots.
  2. If there are mushrooms, just wash them, no need to cut them, even if they are large champignons.
  3. In a saucepan, combine turkey fillet, carrots, onions, potatoes, vegetable oil, salt and pepper the mixture.
  4. Place the mixture in a baking bag or a thick cauldron, add a couple of tablespoons of water, and place in the oven for 50 minutes at 200 degrees. The form in which the dish is baked must be hermetically closed (if it is a cauldron, then the lid must cover it tightly). The dish will turn out very juicy and soft. The water should not evaporate, the dish should not be fried, it should be stewed in its own juice.

Mushrooms - champignons, whole - will look very good in this recipe. Just wash them and add them to the mixture. The finished dish will contain whole mushrooms. Cabbage will also look good in this dish. Ideally, a mixture of regular (fresh white cabbage) and sauerkraut.

Recipe No. 4. Turkey fillet in the oven with vegetables

There are a lot of ingredients in this recipe. I love recipes that have a lot of ingredients, because they give a very, very rich taste, just an explosion of emotions, true pleasure. Ingredients: 1 kg. turkey breast fillet, potatoes - 4 pcs., onion - 1 pc., carrots - 1 pc., shredded white cabbage - 200 grams, sauerkraut - 150 grams (handful), small zucchini - 1 pc., small eggplant - 1 pc., handful green beans, sweet pepper (preferably colored - red, yellow) - 1 piece, adjika or delicious Georgian tomato sauce - 3 tablespoons, salt, ground black pepper, 2 tablespoons of vegetable oil, herbs: dill and parsley.

Cooking method:

  1. Wash the turkey fillet and cut into cubes (2-3 cm on a side).
  2. Peel the potatoes, wash them and cut them into fairly large pieces.
  3. Chop the cabbage, grate the carrots, chop the onion, cut the zucchini and eggplant into cubes (you can remove the skin), and chop the red bell pepper into strips. Green beans do not require chopping.
  4. Mix all the vegetables and meat in a large saucepan, add salt and pepper to taste, add tomato sauce, vegetable oil, and mix.
  5. Transfer the mixture into a baking bag or large cauldron, cover it with a lid, and bake in the oven for 2 hours at 180 degrees. Let it simmer and simmer until fully cooked. Vegetables will release all their juices and flavors.
