The process of preparing homemade dumplings resembles a kind of ritual when the whole family gathers at the table and intimate family conversations begin while modeling. But we rarely treat ourselves to this favorite homemade dish, because it is a rather labor-intensive process that takes a lot of time. And often wondering what to cook from minced meat, dumplings always come to mind, but as always there is little desire to cook them. Therefore, try this homemade dish in a slightly different interpretation! Prepare a delicious dish - lazy rose dumplings. A recipe that does not require a huge amount of time to prepare. Ideal for those who don’t like to spend a lot of time at the stove and prefer less labor-intensive dishes. The preparation of the food is extremely simple, and the taste is amazingly juicy and tasty. Lazy dumplings look spectacular and are shaped like roses, so it’s not a shame to even serve them to guests.

Ingredients for rose dumplings:

Dough:

water - 1 glass
egg - 1 pc.
salt - 1 tsp.
flour to the required dough thickness
Filling:
minced meat (pork + beef) - 500 gr.
onion - 2 pcs.
salt, pepper to taste
Vegetable frying:
carrots - 2 pcs.
onion - 2 pcs.
tomatoes - 2 pcs.
salt, pepper, garlic and any seasonings - to taste
vegetable oil
bouillon

How to cook lazy dumplings:

First of all, mix the dumpling dough. Pour one glass of water into a deep plate, add egg and salt. Mix well and slowly add flour to the resulting mixture. The dough is ready when it stops sticking to your hands and feels elastic to the touch. We put it in a plastic bag and leave it to rest for 15-20 minutes.
Let's start filling. Take minced meat and add finely chopped onion to it. Pepper and salt the minced meat to taste. Mix the filling thoroughly and let stand for 5-10 minutes.
While the dough and filling are infusing, prepare the vegetable frying. Cut the carrots (into strips), onions (in half rings) and fry in oil for a couple of minutes.

Then add garlic, tomatoes and fry for another 5 minutes. Add spices and salt to taste. Place the vegetable mixture in a thick-bottomed pan or deep roasting pan and add a small amount of any broth or water. Simmer for a couple of minutes.

Now the dumplings themselves. Take the dough and roll it out very thin. The thinner the layer, the tastier the dumplings will be. Place the minced meat on the dough and distribute it over the entire surface. Next, roll the dough into a roll and carefully pinch the edges. Cut the roll into circles about 5 cm high. Pinch the circles from the bottom and place them in a roasting pan on top of the vegetable bed. Close the lid and simmer them over medium heat for 30-40 minutes.

For those who love dumplings, I advise you to prepare dumplings, which are distinguished by an original method of modeling. This is a fast way. In addition, in my family, even the men were satisfied with three pieces. The finished dumplings turn out beautiful, resembling roses. These dumplings are steamed in a cascan. It is also called a mantovarka or mantyshnitsa. The dough needs to be rolled out very thin so that it cooks well inside.

To prepare lazy rose dumplings, we will need the products listed in the list.

Let's prepare the filling. To make it juicy, add a lot of onions to the minced meat. Our onion weight is half the weight of minced meat. Grind the onion in a blender or grate it on a grater with large holes. Season with salt and pepper and add ice water. Mix well.

Add salt to the flour, pour in boiling water, stirring vigorously with a fork until lumps form.

Add milk and butter, continuing to stir with a fork.

Beat the egg into the dough and knead into a stiff dough. If the dough is not stiff, add the remaining flour. And even if the dough is stiff (it depends on the flour), you can add more flour. Don't let the fact that the dough is tough scare you. Cover it with film and leave to ripen for 30 minutes. After 30 minutes the dough will become softer.

I used a machine to roll out the dough. If you don't have one, just roll out the dough very thin and cut strips 7 centimeters wide and 35 centimeters long.

Place minced meat lengthwise on each strip.

Fold the strips of dough in half lengthwise and press.

We begin to roll it up. We do this with all strips of dough.

Pour water into the bottom of the cascan and bring it to a boil. Lubricate the cascan grill with vegetable oil. Place the rose dumplings on the grill of the cascan and send them to steam. Close the cascan with a lid. Cook for 45 minutes until the dough is well cooked. And since the caskan has 4 floors, we cook all the dumplings at the same time.

Grease the finished dumplings with butter.

Lazy dumplings can be boiled in salted water, like regular dumplings, using a slow cooker or double boiler. But, in my opinion, they turn out the most delicious and juicy in vegetables. To make these on a vegetable bed, you will need half the time than ordinary ones, which is pleasantly pleasing. How to cook lazy dumplings“Roses”, we’ll look at now.

Ingredients:

Lazy dumplings in a frying pan - recipe

First, let's prepare the filling for the dumplings. The filling will be standard - meat, onions, spices and vegetables. Since our dumplings are quick, it is advisable to use ready-made minced meat for them. If you prefer homemade minced meat rather than store-bought, then it is very convenient to prepare it at home from whole pieces of meat and freeze it in the freezer. It is advisable to use pork or mixed minced meat for dumplings - beef plus pork. Grate the peeled onion on the finest grater. Place it in a bowl with minced meat.

Wash and finely chop the parsley (you can use dill). Add to the minced meat along with salt and spices.

Stir the minced meat until smooth. Place in the refrigerator.

Let's prepare the dough for dumplings. Beat eggs with a pinch of salt in a deep bowl using a whisk. Pour in water (you can use raw water).

Add wheat flour in small portions.

Knead the thick dough with your hands. Cover the finished dough with a towel and let it rest in a warm place for about 15-20 minutes. This will make it more elastic, which means it will be easier to roll out. While the dough is proofing, let's prepare a vegetable pillow for the lazy.

Peel the carrots. Then grate it on a fine or medium grater.

Cut the second onion into small cubes.

Saute the onions and carrots in sunflower oil for 4-5 minutes.

After this, add water (about half a glass), salt, spices and tomato sauce.

Stir the vegetables and simmer for another 3-4 minutes.

That's it, the vegetables are ready. Let's get back to the test. Divide the dumpling dough into two parts. Roll out thinly with a rolling pin on a floured table. The thinner you roll them, the more tender they will be. Coat it evenly with minced meat.

After this, wrap the dough into a roll.

Cut it into pieces 3-5 cm long. Flatten the edges of each dumpling with your hands. Forming roses. This is what the finished ones look like lazy dumplings “Rosochki”.

Place them tightly next to each other for stewing vegetables.

Add some water. Frying should cover the dumplings halfway. Cover the pan with a lid and place on low heat. Simmer the lazy dumplings for about 20 minutes. While extinguishing them, add water as needed. By the way, you get a lot of dumplings – enough for two frying pans. The remaining dumplings can be stored in the freezer and used when needed.

For the filling, use any fresh minced meat: chicken, pork, beef or mixed. If possible, It’s better to buy fresh meat and prepare minced meat at home. Peel the onion and garlic. Finely chop and add to the minced meat. Mix well and season with salt and ground black pepper. Cover with cling film and place in the refrigerator.

For the dough, sift the specified amount of flour into a deep bowl. Beat in a chicken egg and add salt. Pour water at room temperature and knead the mass so that it does not stick to your hands. You may need a little more or less flour to get the desired result.


The consistency of the dough resembles thick dumplings. Cover with a towel and let it rest for a quarter of an hour at room temperature.


While the dough is resting, prepare the tomato sauce. Peel the onions and carrots. Rinse and dry with paper towel. Cut the onion into small pieces, grate the carrots on a medium grater. Heat sunflower oil in a suitable frying pan. Add chopped vegetables. Stirring, fry until soft over moderate heat.


Add 2 heaping spoons of tomato paste, pour in water, preferably hot from a kettle. Stir and boil.


Add sour cream of any fat content. Add salt, pepper and add a bay leaf. Stir and boil. Give it a try. If the sauce is sour, adjust the taste by adding a little granulated sugar. Boil for 5 minutes. and turn off the fire.


The dough has rested and become more elastic. Roll out into a thin layer, dusting the countertop with flour. Take a 200 gram glass or cookie cutter and cut out circles.


Fold 4 pieces overlapping one another, as in the photo. Press lightly in the center with your finger so that the circles stick to each other.


Place a small strip of meat filling in the center of the circles.


Fold the circles in half and press down a little.


Roll into a roll and secure the edge. Beautifully align the “petals”, giving the shape of a rose.


There is a way to make “roses” even easier: roll out the entire dough into a rectangle, spread the minced meat on top in a thin layer, roll it into a roll, which then cut into small rolls.

You can simply pour water into the mold, add salt and lay out the prepared dumplings, then cook in the oven. But I prefer to cook lazy dumplings in various sauces. You can reduce the cooking time for dumplings by making them easier to make. In this case, the dough is rolled out thinly and the minced meat is distributed in an even layer. The dough with filling is rolled into a roll and then cut into pieces. Ready-made lazy dumplings are served with sour cream, adjika, and chopped herbs.

To prepare lazy dumplings in the oven, I prepare the ingredients according to the list.

I peel and wash the onions. I cut one onion into small cubes, two into half rings.

I peel the carrots, wash them, and grate them on a coarse grater.

I'm preparing minced meat. In a bowl, combine minced meat, diced onion, chopped garlic, salt and pepper to taste.

Mix the minced meat well and put it aside.

Then I prepare the dough. Sift the flour into a bowl, add the egg, salt, and melted butter.

I add water and knead the dough. I put it in a bag and put it aside.

I'm preparing the sauce. In a frying pan, lightly fry the onions in butter or vegetable oil. Add grated carrots and fry a little more.

Then I pour in the pureed tomato pulp.

Add sour cream, salt and ground black pepper to taste.

I pour water into the pan and let the sauce boil.

I take 1/3 of the dough and roll it into a thin circle with a rolling pin. If necessary, I add a little flour so that the dough does not stick to the table and rolling pin.

Using a glass or a round cutter, I cut out circles from the dough.

I lay out 4 circles in a row, going a little over the previous one.

Using the round handle of a wooden spoon or spatula, I press the circles as in the photo.

I place the minced meat in a strip in the middle of the circles.

I close the minced meat by folding the dough circles in half.

I roll the dough with minced meat into a “roll”.

I pinch the edge of the resulting “rose” so that the workpiece does not unwind. You can spread the petals a little to the sides to make the “roses” more beautiful. This is how I make the rest of the dumplings.

I prepare lazy dumplings in several forms, but you can bake them in one large form. I distribute the sauce into the molds.

I place the lazy dumplings in the pan with the sauce, spacing them out slightly from each other, as they will increase in size during cooking.

Cover the pan with foil.

I place the forms of lazy dumplings in the oven, preheated to 180 degrees. I cook for about 45-50 minutes.

I decorate the finished dish with herbs.
