Spelled is the ancestor of other cereal crops, the semi-wild parent of modern wheat. It has retained its original unique properties, since it is not prone to crossing with other species.

Currently, this grain crop goes by many names, such as emmer, spelled, emmer, kamut and others. The ears have a reddish-red hue. The taste of the cereal has pleasant sweetish-nutty notes.

It is stable to various contaminants and radioactive radiation, which cannot be said about the more common types of wheat.

Spelled is considered an environmentally friendly product because it does not tolerate the presence of chemical compounds and mineral fertilizers in the soil. Therefore, it does not contain harmful nitrates and carcinogens.

Because of its unique beneficial properties, spelled is called the “black caviar of cereals,” or “a gift from the ancestors.”

Spelled contains a wide range of components. In terms of the presence of vitamins and microelements, spelled is ahead of modern wheat.

One can highlight a high content of vegetable protein - up to 37%, a number of vitamins B, PP and E, 18 amino acids, microelements (iron, phosphorus, copper, potassium, calcium, etc.). All these compounds are contained not only in the core of each grain, but also in its shell.

Indications for use

People are advised to consume this variety of cereal:

  • with weakened immunity;
  • those prone to excess weight and obese patients;
  • elderly;
  • suffering from frequent, including acute, respiratory diseases;
  • with diabetes mellitus;
  • with constant mental and physical stress and chronic overwork, fatigue;
  • in case of disruption of normal bowel function;
  • with high blood pressure;
  • during pregnancy.

What's the use

Due to the wide variety of components necessary for humans, eating spelled dishes contributes to:

  • normalization of intestinal function;
  • stabilization of psychological balance;
  • restoration of energy losses during physical and emotional stress;
  • getting rid of anemia;
  • prevention of cancer;
  • normalization of the endocrine and cardiovascular systems;
  • increasing the elasticity of the skin;
  • blood pressure stabilization;
  • restoration of reproductive function in men and women;
  • reducing the development of atherosclerosis by lowering cholesterol levels in the blood;
  • minimizing the risks of developing infectious diseases;
  • improving the general condition of the body, preventing stress, depression, chronic malaise;
  • lowering blood sugar levels;
  • increasing concentration, visual acuity, improving memory;
  • removal of toxins from the body.

Spelled dishes do not provoke the occurrence and development of celiac disease - an allergy to gluten, which is part of other cereal crops (barley, oats, wheat, rye).

In dietetics

Diets based on spelled dishes have worked well. Thanks to the slow absorption of carbohydrates, the feeling of satiety is maintained for a long time, and the presence of B vitamins in the composition promotes the correct and regular absorption of fats, which is especially important in the fight against excess weight. At the same time, the functioning of the digestive tract is improved, toxins are removed from the body, and cholesterol levels are reduced.

In cosmetology

With regular consumption of einkorn products, complexion improves, nails become stronger, and hair structure is restored.

Spelled flour is added to various ointments and creams to create excellent facial and hair care products. To cleanse the skin and rejuvenate it, use crushed cereal without additives or impurities - this is a good and, most importantly, natural scrub.

Culinary certificate

Currently, spelled dishes are gaining popularity. Nutritionists played an important role in this, declaring the incomparable benefits of cereals.

Various soups and cereals, creams and sauces are prepared from it, and added to side dishes for meat and fish. Since spelled has wonderful taste, it is also used for making desserts, included in salads, and used instead of rice when preparing pilaf and cabbage rolls. Vegetables are stuffed and stewed with spelled and used together with other grains.

The grains produce high-quality flour, which, unfortunately, is rarely used in bread baking - the finished bread turns out to be tough and quickly becomes stale.

The most popular among spelled dishes is porridge. It is traditionally prepared with water or milk. This porridge plays an important role in the children's diet. For kids, various fruits, berries and nuts are added to the recipe.

How to choose

In the store you can find products with different names - spelled, emmer, kamut, emmer, spelt - but you should remember that these are the same cereal. The cereal should be golden in color, clean, without scales. When purchasing, you need to pay attention to the expiration date, production date and sealing of the packaging.

When choosing, coarse grains have the advantage. You should not opt for instant products - such spelled has already gone through the stage of heat treatment and has lost some of its beneficial qualities. In addition, these cereals often contain various food additives, including synthetic vitamins, flavorings and taste enhancers.

Subtleties of storage

Cereals used to be put into bags and stored in dry, dark rooms. Today it is recommended to place it in the refrigerator in an airtight container. The maximum storage period is a little more than six months. Next, spelled gradually begins to lose its beneficial properties and excellent taste.

Let's talk about porridge? Still, this is one of the main dishes on the Russian table, especially in winter, especially in the off-season, when the vitamins contained in cereals become so necessary for us.

Despite the fact that porridge is such a familiar food, not everyone knows how to handle it correctly. The cereal needs to be cooked and it needs to be done correctly. How? Chefs of Moscow restaurants share their experience.

Buckwheat: sort, rinse, fry

Maxim Myasnikov, chef of the Prozhektor restobar

Buckwheat is a universal grain; it can be used as a side dish, as a main dish, and even made into a dessert, but before starting culinary experiments it must be cooked properly.

Many modern producers claim that their buckwheat does not need to be sorted. They're exaggerating. Buckwheat must not only be sorted, but also washed in several waters. It is convenient to use a sieve for washing.

After washing, you need to dry the cereal with a towel.

To make buckwheat fragrant and crumbly, it needs to be fried in a hot dry frying pan for 4-5 minutes until golden brown.

The water should be brought to a boil before you add the buckwheat, then skim off the foam with a slotted spoon and add vegetable oil.

Reduce heat and cook buckwheat for 6-8 minutes. Remove from heat, cover with a lid and leave for a few minutes, add salt to taste, I can’t offer you a more correct recipe.

If you like buckwheat with milk, then add it when the porridge is 50% cooked, then the milk will not burn.

Millet: choose correctly - it won’t taste bitter

Mikhail Simagin, chef of the bakery cafe “Khlebnaya Lavka” and the Siberia restaurant

What millet to buy?

The main sign of high-quality millet is its bright yellow color and dullness. This is what the grain becomes when it is ground. If the millet is shiny, then it is used to feed birds, but in porridge it will taste bitter. Cracked millet cooks faster, but is less tasty than millet with whole grains.

How to cook millet?

  • Clean the millet from debris and dark grains.
  • Rinse the peeled millet in boiled warm water - change the water several times.
  • Pour water into a pan without an enamel coating, based on the ratio that one glass of cereal requires 4 glasses of liquid.
  • Place a saucepan of water over medium heat and let it boil.
  • Change the heat to low, add millet, cover with a lid.
  • Cook for 20 minutes. Open the lid, salt the millet with half a teaspoon of salt, add water if necessary, and keep on the stove for another 10 minutes.

Millet goes well with raw and baked vegetables, with dried fruits, if you add Parmesan, you get an original risotto.

Spelled: soak in curdled milk overnight

Dmitry Shurshakov, chef of the gastrobar “We’re not going anywhere”

What is spelt?

Spelled is wild wheat that contains a huge amount of protein (37%), which saturates the human body, as a result of which the feeling of hunger does not make itself felt for a long time. Spelled has retained the natural set of chromosomes in its original form. All over the world, spelled cereal is considered an environmentally friendly product.

How to cook spelled?

Like any porridge, it should be cooked in a large saucepan with a volume of water commensurate with the amount of water. Bring the liquid to a boil, reduce heat to low and simmer, uncovered, for 30 minutes. Fluff the grits with a fork and let sit for about 5 minutes before serving, seasoning with salt to taste.

How to prepare spelled milk porridge?

In ancient times, spelled was cooked in Russian ovens, which made it especially tasty and rich. However, spelled milk porridge can be perfectly prepared on a modern stove. At the same time, it retains all useful substances in full.

  • You need to soak a glass of spelled in yogurt or kefir overnight.
  • In the morning, drain the excess liquid and rinse the cereal well under cold water.
  • Cook like any other porridge in a saucepan with milk over medium heat.
  • The finished spelled should be wrapped in a warm blanket for half an hour.
  • Before serving, hot porridge is flavored with butter.

Spelled is also great for making a side dish or soup, my recent discovery is spelled with chickpeas and sesame oil.

Cereals are a classic type of food consumed by a wide variety of peoples. However, among them there are species that are underestimated or undeservedly forgotten. One of them is spelled cereal.

Product Description

Origin

Spelled is a product that is now familiar only to a narrow circle of people. Moreover, even many certified chefs with experience have never handled such cereals. Biologists attribute spelled to the genus Wheat. Its grains are covered with a film, and the ear breaks easily. Strictly speaking, spelled is not one plant, but several species at once:

  • double grain wheat;
  • einkorn with one or two awns;
  • wheat "Urart".

These are wild species. The following are used in agriculture:

  • einkorn;
  • einkorn;
  • spelled;
  • Timofeev's wheat;
  • Maha wheat.

Among the plants commonly called spelt, emmer wheat has the greatest value. The films in any spelt are not broken during threshing. The ear is painted brick color. Emerald is a plant with minimal fussiness, and it also ripens quickly. The cereal resists fungal infections well.

Spelled was first cultivated 7 thousand years ago. In any case, this is precisely the latest data from archaeological research. But the peak of success of this cereal was reached in the ancient Roman and Greek civilizations. Then it began to be used even in religious rituals. In Eastern Europe, spelled began to be used in the 10th century.

Einkorn, with its unpretentiousness to weather conditions, survived both harsh winters and long droughts. However, already in the Middle Ages, farmers were upset by the difficulty of cleaning the ear and the low fertility of the plant. Making flour from wheat and rye turned out to be much easier. Therefore, in the 19th century, spelled was rapidly replaced by softer and more convenient grain crops.

But modern nutritionists believe that this was completely unjustified. They argue that the increase in the prevalence of many diseases is associated precisely with the shift away from the use of spelled and other ancient plants.

The benefits of this ancient relative of wheat are also due to the fact that it is little susceptible to treatment with mineral fertilizers. Therefore, it is not profitable for even large farms to use them. This point is useful for the consumer because the grains do not contain harmful components. Another plus: spelled products are exclusive and allow you to be deservedly proud of your status.

Composition, nutritional value and calorie content

Spelled is far ahead of cultivated wheat in terms of protein concentration. It accounts for 37%, which ensures long-term saturation. Wild wheat preserved the original genetic code. And its chemical composition complies with environmental standards. Spelled is rich in folic acid (100 g of product contains 14% of the daily requirement).

Cereal grains also include a noticeable amount of tocopherol and B vitamins. They also contain minerals. The highest concentration (relative to daily consumption):

  • manganese;
  • phosphorus;
  • gland;
  • magnesium;
  • copper;
  • Selena.

It is also worth noting the presence of zinc and sodium, potassium and calcium. Those seeking to reduce body weight can safely use spelled porridge. Thanks to the vitamin B6 it contains, the removal of bad cholesterol is activated. This porridge can also be included in the diet of children and professional athletes. The absence of gluten helps even those with celiac disease to eat spelled dishes without fear.

The shell of the eminkorn grain, even when ground, remains healthy. Anyone who regularly eats spelled porridge is less likely to suffer from digestive problems. Stabilization of the emotional sphere is noted. The nervous system works more efficiently, metabolism and heart activity are normalized. Spelled reduces the risk of cancer, and the only potential danger of its use is personal intolerance.

To get an attractive result, it is advisable to buy spelled cereal in specialized stores that sell healthy foods. It is recommended to check whether the packaging is sealed and whether the expiration date of the cereal has expired. But you shouldn’t take an instant product. Coarsely ground cereal is much better. A high-quality product does not contain unprocessed grains, in addition, it is sure to have a golden color.

Traditional storage methods involve the use of linen bags. Nowadays, sealed containers that are placed in the refrigerator are much more often used. Even this technique allows you to increase the shelf life to only 9 months. At the same time, humidity is limited to 80%, temperature – 20 degrees. You cannot place cereals near food that smells strongly; Particularly bad neighbors are dried meats and seafood.

What is very important is that spelled contains substances beneficial to health in a water-soluble form. Therefore, their absorption is close to 100% and occurs very quickly. The concentration of important components is equally high inside the grain and in its shell. Therefore, you can safely choose cereals that have been ground in any possible way. This will not affect its properties.

The attractiveness of spelled is also enhanced by the fact that it is made without heat treatment. The main components are in just the right proportion to meet human needs. Regular consumption of spelled helps strengthen immunity and optimize blood circulation. It has a positive effect on the reproductive system and helps get rid of chronic fatigue. There is an increase in memory, and the ability to concentrate on something increases.

  • diabetes mellitus;
  • systematic respiratory diseases;
  • vitamin deficiency;
  • excess body weight;
  • problems with nails;
  • unreasonably large physical and intellectual stress;
  • hair dysfunctions.

The calorie content of 100 g of dry spelled cereal is 339 kcal, or 16.4% of the daily requirement of an adult engaged in intellectual work. After cooking, the nutritional value of spelled is reduced to 127 kcal, or 6.1% of the standard daily value. A teaspoon of cereal contains 3 kcal, a tablespoon contains 15, and a glass contains 254 kcal. Spelled cereal is acceptable on the menu during pregnancy; you can give it to small children without hesitation.

Methods for preparing wild wheat

Clean and ground spelled flour can be used to obtain:

  • pasta;
  • soups;
  • side dishes;
  • of bread.

In the old days, the main use of wild wheat and eminkorn was cooking porridge. Russian stoves were used for this purpose. But even the most ordinary stove with gas or electric heating performs no worse. Spelled can also be used to make cookies, muffins and pies. In this case, traditional recipes are used, only replacing the usual types of flour.

Homemade recipes

Most consumers try to prepare spelled porridge with milk for breakfast. But there are also cooks who recommend boiling it in water. Of course, the absence of milk in the recipe reduces the calorie content. At the same time, the taste of the dish turns out to be worse.

How to deliciously cook crushed spelled cereal?

Standard proportions:

  • approximately 200 g spelled;
  • 700 g of clean water;
  • table salt, butter and beet sugar (selected individually);
  • olive oil (15 g).

This dosage is for 1 adult serving. The cereal needs to be thoroughly sorted and washed. To vary the consistency, add less or more water. Cooking time is approximately 5 minutes. But if the heat is very low, it increases to 40 minutes - in this case the dish must be stirred systematically.

It is correct to serve the cooked porridge immediately, as soon as it is ready. You can improve the taste of the dish by adding olive or butter to it. Approximately the same approach is used when preparing spelled milk porridge. Then 400-500 g of milk should be consumed for 300 g of water.

Armenian porridge

The Armenian version differs from the two classic recipes; it is necessarily prepared with meat and mushrooms.

For 1 serving there are 4 champignons, 2 onions and 2 carrots, 300 g of chicken breast. Advance frying of peeled and diced mushrooms and vegetables helps improve the taste of the finished dish. They need to be fried strictly in olive oil. Ideally, you should use the multicooker in baking mode. Soaking cereals for 12 hours in cold water helps reduce the processing time of cereals.

Steamed spelt cooks well in water. You can also get high-quality breads and buns from it. The softness of the taste and the nutty hue of the surface will delight any gourmets and aesthetes. If you decide to cook porridge, you need to use three times more water than cereal. There is no need to soak the steamed product, unlike the wild variety.

You can also make sweet porridges from spelled. They are prepared by adding an increased amount of sugar to the dish. A more natural option involves using chopped dried fruits, fresh fruits, raisins and nuts. Another way: just before serving, add a small amount of honey.

Spelled is well suited for preparing not only porridges, but also soups. Moreover, it is suitable for dessert and various salads. There are options for cabbage rolls and pilaf, where this cereal successfully replaces rice. Spelled is suitable for stuffing various stewed vegetables. It would also be a good idea to use the ancient plant together with other grains.

Spelled was a popular grain crop in ancient times. Excellent soups and side dishes were prepared from it, which turned out to be very filling and tasty. Spelled - what it is, how to prepare it correctly and what properties it has, let's take a closer look.

Today it is called a wild relative of wheat. Outwardly it looks like a reddish-red spike. It has a spicy taste, with a sweetish-nutty note. It also has other names - spelled, eminkorn or kamut.

Scientists have found that this crop does not tolerate chemically contaminated soils, so it is grown exclusively on environmentally friendly lands. It is also not capable of accumulating carcinogens, mineral fertilizers for cereals and other plants, and other substances, which makes it even more attractive as a healthy dish.

Composition and calorie content

Due to the lack of ability to cross with other crops, spelled was able to retain its composition in its original form. That is why it is much healthier than modern varieties of wheat.

Spelled composition:

  • vegetable protein in amounts up to 37%;
  • vitamins of groups B, PP and E;
  • 18 types of amino acids;
  • many microelements such as iron, potassium, phosphorus, copper, calcium and others.

It is worth noting that the substances are contained not only in the grains, but also in its shell.

Spelled: benefits and harm to the body

The cereal plant is often prescribed for various diseases, as one of the components of a healthy menu.

But there are also some contraindications, so the benefits and harms of spelled for the body must be known before consuming it.

Benefits of Emerald:

  • a source of large amounts of energy when exhausted by physical activity;
  • normalization of intestinal function;
  • prophylactic against oncology;
  • normalization of blood pressure and psychological state;
  • decrease in glucose;
  • beneficial effects on skin condition, vision, memory, concentration, and ability to conceive.

Harm to the body is only possible if a person is intolerant to the product. The very rejection of the product lies in the presence of gluten in the grains, which is found in all cereals of the wheat genus. Failure to take the substance is expressed in digestive disorders - bloating, diarrhea.

If you take spelled dishes despite intolerance, you may develop celiac disease, for which there is no effective cure yet. The only way to protect yourself from exacerbation of the disease is not to consume products made from wheat cereals.

Benefits for weight loss

The opinion of nutritionists on this topic is unanimous - it is precisely because of the rejection of such foods rich in beneficial microelements that modern people have so many different diseases. The calorie content of the cereal is 127 kcal; with a high protein content, it is very useful during sports and is well suited for dietary nutrition.
