Spelled porridge is not only healthy, but also tasty. You can prepare spelled porridge in different ways: with water, milk, in a slow cooker with the addition of meat, seafood, mushrooms, fruits and berries. Get to know the history of the origin of cereals, and also discover simple, step-by-step recipes for spelled porridge.

Easy to prepare

An ancient type of wheat with the unusual name “spelt” originated in the fifth millennium BC. e. This cereal gained particular popularity in Ancient Rome and Greece, where it was used to make bread for ritual sacrifices.

In Ancient Rus', spelled was known by the 10th-11th centuries. The peasants could not get enough of their happiness, because einkorn (previously called spelled) was unpretentious to the weather. Spelled hard scales, rich in fiber, could withstand severe winters and dry summers; this did not affect the yield in any way. But there was still a main drawback - the ears were poorly cleaned and produced little grain. It was necessary to work hard to grind them into flour.

Around the middle of the 19th century, a sharp decline in the volume of spelled crops began and the development of other softer grain crops began, so this unpretentious type of wheat was forgotten. But times change, “everything new is something old that was once forgotten.” And again, nutritionists put spelled porridge on a par with the healthiest foods.

Composition and beneficial properties

Spelled is wild wheat that contains a huge amount of protein - 37%, which saturates the human body, as a result of which the feeling of hunger does not make itself felt for a long time. Spelled has retained the natural set of chromosomes in its original form. All over the world, spelled cereal is considered an environmentally friendly product.

For people who are watching their weight, spelled porridge has proven to be simply irreplaceable, as it contains vitamin B6, which helps eliminate toxins and cholesterol. Porridge is often included in the diet of athletes and children. Spelled does not contain gluten, so it can be consumed by people suffering from gluten intolerance (celiac disease).

The spelled shell retains its beneficial properties even after grinding. Regular consumption of spelled porridge contributes to:

  • improving the functioning of the digestive system;
  • improvement of emotional state;
  • normalization of the nervous, endocrine and cardiovascular systems;
  • reducing the risk of developing cancer;
  • strengthening the body's defenses.

There are no contraindications, but in rare cases individual intolerance is observed.

Photo of spelled with vegetables

Surely many thought: “Spelled?!! It seems something familiar.” Familiar from Pushkin's fairy tale "About the priest and his worker Balda." But probably only a few have tried it. And I myself just recently learned about such a wonderful cereal - amazing wild wheat! My husband just saw it in the supermarket, bought it, brought it and cooked it. I fell in love with this nutty taste immediately. Now spelled is on my healthy menu weekly, because thanks to its balanced combination of nutrients, spelled quickly saturates the body, gives vigor and energy for a long time!
If you allow me, a small ode of praise to this SUPERFOOD: SPELLED is the ancestor of wheat, the most ancient cereal with a set of chromosomes that has remained unchanged for centuries. It was forgotten for many years, since its harvest is very difficult to harvest: the ear is very fragile and the combine cannot cope with processing this grain, it crushes it into pieces and turns it into dust, so it is cut off with a scythe and ground out with threshers, and this is a long and expensive process . But, fortunately for us, spelled has recently experienced a new surge in its popularity and entered the top of the healthiest products in the world. And no wonder: this genetically pure cereal, unlike wheat, has a higher bioavailability for humans, so all the vital substances from this grain can be quickly absorbed into the body, and spelled grains are protected from harmful and toxic substances by a super-dense shell , which can protect grain from almost any type of contaminant. It contains more protein, fat and crude fiber than wheat, and also has large amounts of vitamin B17 (which has anti-cancer effects), as well as significant levels of iron, copper, manganese, magnesium, phosphorus, potassium, zinc, selenium, niacin, thiamine, vitamin B6 and folic acid. Spelled proteins contain all nine essential amino acids needed by the human body, which are not produced in our bodies and can only be obtained from food. As you can see, it’s not for nothing that it’s called black caviar among grains!!!
So, finally, what can spelled do: improve digestion, reduce excess weight, reduce bad cholesterol, increase hemoglobin, regulate blood sugar levels, regulate hormone levels in the body, improve the condition of the skeletal system, increase immunity and endurance of the body.
You can find cereals in the cereal or diet food departments of large supermarkets (it costs the same as buckwheat), or in stores and on health food websites (but they are usually more expensive there).

Let's sum it up

There are many recipes based on grains such as spelled. In our country, porridge from this product is not prepared very often. Many housewives believe that in order to completely soften the cereal in question they will need a lot of free time. And indeed, spelled, unlike buckwheat or rice, takes quite a long time to cook. To significantly shorten this process, many cooks recommend soaking the product in cold water in advance and keeping it in this way for about half a day. During this time, the spelled will absorb some of the liquid and become softer and looser.

Do I need to soak spelled? Since spelled is crushed wild wheat, soaking will of course make the grain softer. There are quite a large number of spelled varieties, and there are hard-grain varieties - they will cook without soaking for quite a long time and can boil into porridge. However, if the spelled has already been tested and without soaking it is enough to add a small amount of cooking time, then you can skip this step.

For morning porridges, spelled can be cooked with the addition of sugar and fruit additives. For greater nutritional value, you can cook spelled porridge with milk. To enhance the taste, spelled can be soaked not in water, but in kefir or yogurt.

As a side dish, spelled after cooking can be fried with onions, carrots, seasonal vegetables, and mushrooms.

The price of spelled is from 150 rubles/400 grams. (Moscow average as of November 2018), cereals can be found in large hypermarkets. Despite the price and the fact that spelled is considered a rather rare grain, be prepared for the fact that the grain may end up with pebbles and plant husks - you need to select the pebbles and remove the husks by washing the grain.

Other cereals, which, along with spelled, are produced from wheat - semolina, Poltava cereal, bulgur, couscous. The taste of boiled spelled is very reminiscent of semolina and “asks” to be supplemented with butter.

The calorie content of spelled is 337 kcal/100 grams.

Spelled is very boiled - from 170 grams of dry cereal you get 780 grams of side dish.
